CHICKEN ENCHILADA CASSEROLE for TWO

1 cooked chicken breast, shredded
1 can cream of mushroom soup, undiluted
1⁄2 small can diced chilies, drained
1/4 cup milk
1 cup shredded cheddar cheese
Tortilla chips

Divide recipe between Mini Bean Pots.  Mix all ingredients, except cheese, in bowl. Start with a layer of chicken mixture, layer of crushed tortilla chips, then cheese. Continue with layers and end with chicken mixture. Microwave with lid on for 8 minutes. Sprinkle a bit more cheese on top before serving.

1 Minute Egg Casserole - Quick and Easy!!

60 second cook time. 
How awesome is that? Breakfast for One!! Yummy!
 
Mix 2 large eggs and 1 tablespoon of milk in mini casserole dishes.
Add the following:
* 2 Tablespoons shredded cheese (your choice)
* Diced veggies of choice
* Diced meat of choice
* Salt and Pepper to season
Cover
Microwave on high for 1 minute! Enjoy!

Quick and Easy Apple Crisp

  • Ingredients
    • 2 cans Apple Pie Filling
    • 1 stick of butter
    • 1 box any type of cinnamon muffin or cake mix.  It tastes really good with this Apple Caramel Duncan Hines Mix.
    You will also need a Celebrating Home Bean Pot.


    1st Step - Layer both cans of pie filling on the bottom of the Bean Pot.

    2nd Step - Layer cake mix on top of pie filling.  Then cut up the stick of butter and place pieces on top of cake mix.  Do not mix.  Leave layered.  Microwave with the lid on for 15 minutes.


    3rd Step - Remove from microwave.  Use a fork to break up the crispy layer on top.


     Serve warm with ice cream.  Enjoy

    Quick and Easy Brownies in the Bean Pot


    • In your bean pot, mix all ingredients that are listed on the brownie box.
    • Microwave on high for 8 minutes with the lid on.
    • Serve with cool whip or ice cream.
    • Yummy!!!

    Super Easy Mac 'N' Cheesy


    • 2 cups elbow macaroni (uncooked) 
    • 1 can chicken broth, 2 cups Half/Half 
    • 8 oz shredded cheese. 

    • Directions
    • Place macaroni, broth, and half n half into Bean Pot. 
    • Stir then cover with lid. 
    • Heat on high in microwave for 14 minutes (rotate every 2 minutes if no turntable). 
    • Remove from microwave, add cheese, stir, place lid back on Bean Pot. 
    • Let sit 10 minutes to allow the cheese to melt. 
    • Stir and serve warm.

    Cherry Cheese Croissant

    1 can cherry pie filling (or any fruit filling)
    1 8 oz. cream cheese
    2 Tbsp sugar
    2 pkg Pillsbury crescent rolls
    Little powdered sugar & milk
    In the Celebrating Home Hospitality Set, place crescent rolls triangles on the edge and spread cheese & sugar on the bottom, then the filling & fold over.  Bake at 375 degrees for 25-30 min.  Save a little of the cream cheese and add powdered sugar & milk to make frosting.  Drizzle over warm dessert.

    Taco Soup in the Bean Pot

    1 pound hamburger or turkey (cooked and drained)
    1 -28 oz can kidney beans
    1 -28 oz can diced tomatoes
    1 -14 oz can corn
    1 package of taco seasoning

    Dump all of the ingredients into Bean Pot. 

    Do not drain liquids. If you like a lot of soup add one can chicken broth
    Add 1 packet of taco seasoning and stir. 
    Cover and microwave for 15-20 minutes. 
    Serve with sour cream, cheese & corn chips.

    Fiesta Chicken in the Bean Pot

    2-3 skinless, boneless chicken breasts (raw)
    1 can black beans (drained)
    1 can corn (drained)
    1 jar salsa
    Cheddar cheese & sour cream (optional)

    Cut chicken into bite sized pieces right into Bean Pot.  Add remaining ingredients & stir.  Cover and microwave for 8 minutes. Stir & microwave again for 8 minutes.

    Serve with rice or pasta.

    Pork Chops and Rice in the Bean Pot

    Ingredients
    • Uncle Ben's Rice or Pilaf Mix
    • Pork Chops
    Directions
    • Empty contents of rice/pilaf mix into Bean Pot. 
    • Add water according to package directions. 
    • Place pork chops on top of rice & sprinkle seasoning mix on meat. 
    • Cover & bake for 1-2 hours at 350°F.

    Easy Chicken and Gravy in the Bean Pot

    1 large pack of boneless, skinless chicken 
    2 cans of Cream of Chicken soup 

    Mix both ingredients into bean pot and cook at 350 for 1.5 - 2 hours.

    Serve with rice and veggies.

    Crispy Cheddar Chicken

    2 lbs chicken tenders or 4 large chicken breasts
    2 sleeves Ritz crackers
    1/4 teaspoons salt
    1/8 teaspoon pepper
    1/2 cup whole milk
    3 cups cheddar cheese, grated
    1 teaspoon dried parsley

    Sauce:
    1 10 ounce can cream of chicken soup
    2 tablespoon sour cream
    2 tablespoon butter

    Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in. 

    Spray a 9×13 Celebrating Home Casserole with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

    In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

    Bean Pot Lasagna in the Microwave

    Ingredients
    1 box of no-boil lasagna noodles1 jar spaghetti sauce
    1 16 oz ricotta cheese
    1 egg
    1 pound hamburger meat/Italian sausage

    1 cup water

    Directions

    Place thawed meat in bean pot with the lid on and microwave for 2 minutes. Break up the meat and cover again. Microwave for 2-4 more minutes until browned. Drain off any excess fat.

    Next break up the noodles and place them in the bean pot. Mix the egg in with the cottage cheese and then mix into the bean pot with the sauce. Add 1 cup of water and mix again.

    Place lid on bean pot and microwave for 20 minutes stirring every 5. If it starts to look dry, add a little more water as the noodles tend to soak up the moisture.

    Simple and Easy. Enjoy!!



    Spaghetti Chicken in the Bean Pot

    Ingredients
    • 1 jar of Spaghetti sauce 
    • 4 drained 5 oz. cans of cooked chicken or 1 lb cooked ground beef
    • box of Spaghetti noodles
    Directions
    • Mix sauce and meat in the bean pot.  Bake at 350 for 15 minutes with lid on.
    • Remove from oven and mix in uncooked broken spaghetti noodles. 
    • Cover with lid and bake for an additional 40 minutes or until noodles are done.
    NOTE: You can use regular uncooked chicken instead of canned but triple the first cooking time.

    Chicken Pot Pie in the Bean Pot

    Ingredients
    2 lbs cooked chicken
    2 cans cream of potato soup 
    1 can of water
    1 small bag of frozen veggies
    1 can of crescent rolls. 

    Directions
    Place all ingredients into Bean Pot except the crescent rolls. 
    Mix well then place in oven at 375F for 20 minutes, with lid on. 
    Place crescent rolls unfolded on top of mixture (all six will fit). Leave lid off and cook until crescent rolls are golden brown.

    Enjoy!!

    Death by Chocolate Cake in the Bean Pot

    Ingredients
    1 Devils Food Chocolate Cake Mix
    3 eggs
    16 oz sour cream
    1/2 cup chocolate chips

    Directions
    Mix all ingredients (except chocolate chips) in your Bean Pot & mix well.
    Mix in chips.
    Cover with lid & cook in microwave 13 minutes.
    Do knife test. If not done, bake in one minute increments (all microwaves are different).
    Serve with whipped cream , ice cream, or drizzle fudge sauce over top while hot.

    St. Patrick's Day Cake in the Bean Pot

    1 white cake mix
    16 oz sour cream
    3 eggs
    Green food coloring

    Mix all ingredients in the bean pot until lumps are gone.

    Add 1 cup chocolate chips and microwave for 7 minutes with the bean pot lid on and then 4-6 more minutes with the lid off!

    Strawberry Soda Cake in the Bean Pot

    One Strawberry Cake Mix
    Can of Strawberry Soda

    Mix both ingredients in your Magic Bean Pot.
    Cover with the lid and microwave for 8 minutes.

    Stick a butter knife in the middle to check if the cake is done.  If not, continue to microwave in 1 minute increments, check again & do 1 minute again until it is complete. Remember, stoneware will continue to bake your food, so remove the lid when complete.

    Bean Pot Salsa Chicken

    • 6-9 chicken thighs 
    • 1 can rinsed black beans 
    • 1 cup chunky salsa 
    • 1 cup frozen white corn 
    Put your chicken in the Bean Pot. Top with the rinsed black beans, salsa, and corn. Cover and cook on 400 for 1.5 hours. Cooking time will vary depending on how big the pieces are. If you decide to use breasts, increase your salsa by 1/2 cup.

    Rotisserie Style Chicken in the Bean Pot

    Whole chicken (innards removed)
    2 Cups water
    1 Chicken bouillon

    Seasoning mix of your choice- like Lawry’s seasoning salt, McCormicks Rotisserie Chicken, Emeril’s Essence, Garlic pepper, Lemon Pepper.

    Place chicken in bean pot. Add water and bouillon. Cover chicken with seasonings. Put lid on Bean Pot and microwave 30 minutes.

    13 Minute Meatloaf in the Bean Pot

    1 1/4 lbs ground turkey or beef
    ½ cup bread crumbs
    ¼ cup ketchup
    1 egg
    salt and pepper to taste
    2 T Worcestershire Sauce
    Mix together in the Bean Pot – shape into a loaf, put lid on and microwave for 13 minutes.
    Cooking time may vary by size and microwave.

    Easy Teriyaki Chicken in the Bean Pot

    1 large pack of boneless, skinless chicken thighs
    1 bottle Teriyaki 30-minute Marinade by Lowry’s

    Put both in bean pot and cover.  Bake at 350 for 1.5 - 2 hours.

    Bean Pot Pork Chops and Stuffing

    Ingredients:
    • 5-6 pork chops (thawed not frozen)
    • 1 can cream of mushroom soup
    • 1 tsp. Sage
    • 2 tsp. Minced garlic
    • ¾ c. of water
    • 1 box instant stuffing
    Put instant stuffing in your Bean Pot. If it has a separate packet of seasoning, set aside for later. 
    Layer pork chops on top. 
    Sprinkle with sage, and garlic (and seasoning packet from stuffing if applicable) 
    Pour in ¾ cup of water. 
    Spread cream of mushroom soup over top. 
    Cover and cook at 350 degrees for 1 to 1 ½ hours. (closer to 2 hrs if chops were thick---keep an eye on them.) 
    Serve with mashed potatoes, applesauce and salad.

    Perfect Rice in your Bean Pot

    Ingredients 
    • 3 cups instant rice 
    • 3 cups water or chicken broth 
    • 2 tablespoons of butter 
    • Salt & Pepper to taste 
    Mix all ingredients in your bean pot.
    Put in the microwave with the lid on for 5:55 minutes. 

    You will get PERFECTLY steamed rice to use with any dish!

    Ultimate Bean Pot Mashed Potatoes

    Ingredients 
    • 5 Pounds of Russet Potatoes 
    • 1 garlic clove minced 
    • 1 1/2 cups chicken broth 
    • 1/4 cup butter, cut into small cubes chunks 
    • 1 1/4 cup light sour cream 
    • 1 teaspoon salt 
    • 1/4 teaspoon ground black pepper 
    • 1/3 cup milk, warmed 
    • 2 ounces of light cream cheese 

    Instructions

    • Peel and cube potatoes.
    • Put the potatoes, chicken stock and butter into the Bean Pot
    • Cook at 350 degrees for 1 hour. 
    • Check potatoes for tenderness.
    • If not done, cook for another 30 minutes.
    • Roughly mash the potato mixture.
    • Add garlic, sour cream, salt, pepper, milk, and cream cheese.
    • Finish mashing.

    Apple Cinnamon Spice Cake in the Bean Pot

    1 Spice cake mix
    1 can Apple Pie filling 
    3 Eggs

    • Pour all ingredients into bean pot. 
    • Mix well with a spoon.
    • Microwave on high for 12-15 minutes. If your microwave does not have a carousel, rotate ¼ turn every 3 minutes.
    • Let cool for 15 minutes
    • Drizzle with caramel. 
    • Top with ice cream or whipped topping

    Cheesy Chicken and Rice in the Bean Pot

    5-6 chicken breasts
    2 cans Cheesy Broccoli Soup
    2 cans chicken broth (with garlic)
    2 cups Minute Rice
    1 bag frozen broccoli

    Mix chicken breasts, broccoli soup and broth in the Celebrating Home Bean Pot.  Cover and bake at 250 degrees 2 hours.  

    Add frozen broccoli and Minute Rice. Put back in the oven for 1 more hour & serve hot.

    GARLIC CHICKEN ALFREDO IN THE BEAN POT

    1 jar (16 ounces) Creamy Garlic Alfredo Sauce, or Alfredo Sauce 4 to 6 boneless chicken breast halves 
    1 can (4 ounces) sliced mushrooms, drained 
    8 ounces spaghetti, hot cooked 
    Grated Parmesan cheese 

    Pour about 1/3 of the sauce into the bean pot. Place chicken in the bean pot. Top with mushrooms and remaining sauce. Cover and cook on 350 for 1.5 - 2 hours. Serve with hot cooked spaghetti, Parmesan cheese and a tossed salad. Serves 4 to 6.

    Frito Corn Salad in the Bean Pot

    1 10 1/2 Bag of Chili Cheese Frito’s Crushed
    2 Cans of Corn Drained
    1/2 Cup Red Onion Chopped
    1 Medium Green Pepper Chopped
    1 Cup Mayo

    Mix all ingredients in Bean Pot except Frito’s. Add Frito’s right before serving.

    If you place your Bean Pot in the freezer for an hour before adding the ingredients, your salad will stay cold.

    Potato Soup in the Bean Pot

    • Potatoes
    • 1 cup Evaporated Milk
    • 1 stick Butter
    • Salt
    Cut enough potatoes to fill bean pot 3/4 full. Add enough water to barely cover potatoes. Microwave for about 20 minutes on high stirring at least once during cooking time. If potatoes aren't the consistency you want for your soup continue to cook 1 minute and check until done to your liking. Drain 1 cup of water and add evaporated milk, butter and salt. Put back in microwave for another 7-9 minutes. Great sides to offer as topping for the soup are bacon bits, grated cheese, chives and sour cream.

    Bacon and Cheese Fettuccine in the Bean Pot

    Ingredients
    * 8 Strips of Bacon that you have cooked & crumbled
    * 1 box of Uncooked Fettuccine noodles
    * 2 cans of Diced Tomatoes (14.5 oz)
    * 2 cups of Chicken Broth
    * Seasoning of your choice: Italian, salt & pepper, basil, oregano
    * Brick of Cream Cheese
    * OPTIONAL - chopped Onion


    Directions:
    * Place all ingredients (except cream cheese) in the Bean Pot.
    * Place lid on bean pot & microwave for 25 minutes.
    * Once everything is cooked, add cream cheese and microwave for a couple more minutes.

    Iced Brownies Recipe

    Ingredients
    • 1 package 13 x 9 family-size chocolate brownie mix
    • 1 2/3 cups (10-oz. pkg.) NESTLÉ® TOLL HOUSE® Valentine Morsels, divided
    • 1 container (12 oz.) whipped strawberry or fluffy white frosting
    Directions 
    • PREHEAT oven, grease 13 x 9-inch baking pan and prepare brownie mix batter according to package directions.
    • SPREAD batter into prepared baking pan. Sprinkle with 1 cup morsels.
    • BAKE according to package bake times for 13 x 9-inch pan size. Cool completely in pan on wire rack.
    • SPREAD frosting over brownie. Sprinkle with remaining morsels. Cut into bars. Store covered in cool place.
    VARIATION: Along with sprinkling the morsels, top with 1/4 cup coarsely crushed peppermint candies, cinnamon candies or 2 tablespoons Valentine sprinkles.

    Bean Pot Ice Cream Cake - Thin Mint Girl Scout Cookies


    • Layer 5 mint chocolate ice cream sandwiches in your bean pot.
    • Cover with 8 oz. cool whip and a layer of crushed thin mints. Repeat (ending with crushed thin mints)
    • Freeze for about 4 hours. Scoop out and enjoy!! 
    Tastes like a Dairy Queen ice cream cake for only about $8!! Let's support those Girl Scouts.


    Bean Pot Easy Chicken


    Place ingredients in Bean pot in following order:
    6 thawed, boneless, skinless, chicken breasts
    1 can cream of mushroom soup
    1 can cream of chicken soup
    Sprinkle ½ envelope of Lipton’s Onion Soup Mix
    Bake 2 hrs at 350 degrees.
    Cook 2 cups of instant rice & serve with your favorite veggies.

    Bean Pot Caramel Apple Brownies

    1 box brownie mix
    1 can caramel apple pie filling
    1-2 cups chopped pecans (optional)
    1 caramel topping

    In bean pot combine brownie mix as directed. Add apple pie filling and mix well. Cook in microwave with lid on for 13 minutes. Let set for 5 to 10 min. Add Caramel Topping, Chopped Pecans on top and serve.

    Dreamsicle Cake in the Bean Pot

    1 yellow cake mix
    1 can Sunkist Soda
    16 oz Cool Whip
    Dump dry cake mix into bean pot. Pour Sunkist into Bean pot. Stir VERY well to mix these two ingredients only. Put lid on bean pot. Cook in microwave for 8 minutes. Serve with cool whip. Can use sugar free cool whip and cake mix with Diet Sunkist! Yummy and easy! Also great with cola and chocolate cake mix.



    Banana Split in the Bean Pot

    • In the bean pot, fold together 12-oz non-Dairy Whipped Topping (Cool Whip) with 14-oz can sweetened condensed milk. 
    • Gently fold in 21-oz can cherry pie filling. 
    • Drain 8-oz can crushed pineapple and fold the pineapple into the mixture. (Drink the juice.) 
    • Cut 3 bananas into chunks and fold into mixture. 
    • Chill for 2 hours and serve. 
    Tastes like a banana split!

    Scalloped Potatoes in the Bean Pot

    BLT Scalloped Potatoes
    1 Bag Frozen Hash browns
    1 Cup Sour Cream
    1 Can Cream of Chicken Soup
    1 Cup of milk
    1/4 cup butter or margarine

    1 Cup shredded cheddar cheese

    Mix first 5 ingredients in bean pot then sprinkle with cheese. Bake at 350 for 1 hour.

    WINTER WHITE CHILI

    1 pound ground turkey
    1 chopped onion
    1 16 ounce can white beans drained
    1 14 oz. whole kernel corn drained
    1 14 ounce can chicken broth
    Chili Powder to taste
    Brown meat and onion drain and add to Bean Pot. Add remaining ingredients and cook in microwave for 20 minutes. Just add chips or bread.

    Bean Pot Egg Casserole in 10 Minutes!!

    Ingredients:
    * 12 large eggs
    * 1/4 cup shredded cheddar cheese
    * 1/4 cup milk
    * 6-8 slices of cooked bacon or crumbled sausage
    * salt/pepper to taste
    Directions:
    * Spray bean pot with a non-stick cooking spray.

    * Put it all the in bean pot & scramble. 
    * Place lid on bean pot and microwave on high for 4 minutes.
    * Take out of microwave and re-scramble.
    * Replace in microwave and cook on high for 5-6 minutes.

    French Toast & Sausage in the Bean Pot

    Ingredients:
    10 slices bread (cubed)
    5 eggs
    1/3 cup milk
    Cinnamon and nutmeg
    Pancake syrup
    Sausage links

    Directions:

    • Place enough bread in bean pot to fill halfway.
    • In a bowl, whisk eggs, milk, dash of cinnamon and nutmeg together.  
    • Pour mixture over bread.
    • Squeeze pancake syrup over top of mixture making an “S” shape in both directions.
    • Cover with foil and twist to make handles on each end of bean pot.
    • Place sausage links on foil.
    • Bake at 350 degrees for 45 minutes.

    Bean Pot Surprise Cake

    (Perfect for Valentine's Day)

    1 Box Of Funfetti Cake
    1 Can Of Cherry Pie Filling
    1 Can Of Chocolate Frosting

    Mix together dry cake mix and pie filling in bean pot. Then drop spoons of the fronting on top of the mix. Place in microwave for 15 minutes. Put lid on bean pot while cooking. Serve with ice cream.

    1,2,3,4 Bean Pot Mac and Cheese

    1 stick melted butter
    2 cups uncooked macaroni
    3 cups shredded cheese
    4 cups of milk
    Combine all ingredients in the Bean Pot. Cover with the lid and place in 350 degree preheated oven.  Stir every 30 minutes until done.

    Easy Monkey Bread

    1 pkg biscuits
    ½ - ¾ stick of butter - melted
    1/3 cup brown sugar
    2-3 Tbsp Cinnamon

    Cut biscuits into quarters directly into Bean Pot. Pour butter, brown sugar & cinnamon over the biscuits & stir until well coated. Cover w/lid. Bake @ 375 for approx. 10 min (check if done) OR Microwave for 3-5 min & let cool for a few minutes.

    Perfect Mashed Potatoes in a Bean Pot

    Ingredients
    1 package (3 ounces) cream cheese, softened
    1/2 cup sour cream
    1/4 cup butter, softened
    1 envelope ranch salad dressing mix
    1 teaspoon dried parsley flakes
    6 cups warm mashed potatoes (without added milk and butter)

    Directions
    In a large bowl, combine the cream cheese, sour cream, butter, salad dressing mix and parsley; stir in potatoes. Transfer to Bean Pot, cover and cook on 350 for 1 hour. Yield: 8-10 servings.

    CARAMEL APPLE BROWNIES

    1 box brownie mix
    1 can caramel apple pie filling,
    1-2 cups chopped pecans (optional)
    1 caramel topping (if desired) 
    In bean pot combine brownie mix as directed. Add caramel apple pie filling and mix well. Cook in microwave for 13 minutes. Let set for 5 to 10 min. Add toppings and serve.

    BONELESS PORK CHOPS

    Brown the pork chops in a skillet in olive oil then place them in the bean pot. Cover them with a can of Campbell's Cream of Celery soup. Bake at 350* for 1 hour. Can serve with rice to eat - place the rice on your plate first, then the chops and sauce over top. WOW, the pork chops are so tender you can cut them with a spoon!

    GIRL SCOUT COOKIE BEAN POT CAKE


    1 Chocolate cake mix, Moist Supreme or Deluxe
    1 Tub Chocolate frosting
    10 - 12 Thin Mints, Caramel Delights or Do Si Dos

    Empty dry cake mix into Bean Pot. Add eggs, oil and water, in amounts according to package. Stir well with a spoon, being sure to break up lumps. Fold cookies into batter. Drop 6 - 8 heaping spoonfuls of frosting on top of batter. Put the lid on your Bean Pot and microwave 7½ - 10 minutes. Microwaves vary in cooking temperatures so be sure to check if done at 7½ minutes. (Cake will have a soft chocolate bottom). When done, let sit for 10 minutes, then gently fold frosting through cake. ** You could also do the lemon cookies with lemon cake and icing. **

    Chicken Tacos

    1 envelope of taco seasoning
    6 boneless, skinless chicken breasts
    1 jar of salsa
    Place all ingredients into Bean Pot. Stir and cook on 375 for about an 1 hour or until chicken is cooked throughout. Should be able to shred with a fork. Place chicken mixture in tortillas and add your favorite toppings!

    Bean Pot Taco Casserole

    Cook a Pound of Ground Meat (Turkey or Beef).
    Add Taco Seasoning. 
    Add a Can of Chili Beans, Refried Beans and mix well with Taco Meat. 
    Layer 2 or 3 times in your Bean Pot: Crushed Tortilla Chips, Meat mixture, and Shredded Cheese of your choice.
    Bake in Oven at 350 degrees until Cheese is Melted. 
    Top with Sour Cream, Salsa, or Olives.  Serve with rice.  Enjoy!!!
